During the year we deliberately restrict the vines' yield. We want the plants' strength to be concentrated in the few grapes they carry. At the same time this raises their life expectancy nad thus their strength. For even in dry periods old vines can find enough water and minerals with their deep roots. The careful tending of the vineyard reaches its pinnacle in the selective harvest. In several steps we pick grapes if the same degree of ripeness each picking becoming a different wine in the cellar. Behind this process lies the vintner's experience and patience, he decides about each different selection according to his vision of the finished wine. Being a founding member of the VDP, a controlling body demanding the highest standards, we regularly subject our wines to experts' critical examination.
