Our cellar

... but none that would be more ideal for our Rieslings. After the picking of the grapes all our effort concentrates on retaining the potential the wine carries within itself, which originated in the vineyard. You cannot add anything in the cellar.

In our deep cellars the wooden casks are filled by gavity prior to the fermentation. The complete vinification takes place there. Nearby springs result in extremely high humidity in the cool cellars: conditions optimal for the development of the wines. Three floors below grond our Rieslings can age in some cases for decades in the bottle without any change in the fill level - until they show their best, which sometimes you can only sense at the beginning.
