A truly exhilarating Kabinett:

Exotic & local fruits - apple, pear, and passion fruit - delight the nose. Juicy, ripe pineapple, supported by the dainty acidity of oranges and the ethereal nuances of mint and lemon thyme, reveals itself in the mouth. A long, delicate finish rounds off the brilliant drinking pleasure and simultaneously encourages the next sip.

Pairing recommendations:

The chef recommends a good movie and a bowl of salted almonds ;-)
Also nice with illustrious company for an aperitif.

The 2020er Rausch Kabinett, as it is referred to on the front label, with AP 03 was made from fruit picked at 87° Oechsle and was fermented to fully
fruity-styled levels of residual sugar (61 g/l). Rather restrained and shy at first, the wine only gradually opens up to offer refined smoky and floral
notes of yellow peach, cassis, candied grapefruit, orange blossom, aniseed herbs, and mint. The wine proves rather smooth and rich with more
than a hint of Spätlese character to it on the palate. It leaves a rather elegant, smooth, light, and almost easy in the juicy and velvety finish. A kick of
spicy and zesty acidity lifts up the flavors in the finish. 2027-2040
