Tasting Notes:

If the steep slate slopes of the Rausch could speak, this is the story they
would tell. The nose opens with a quiet, nimble range of dried pears,
candied lemons, orange blossom, and an elegant smoky reduction.
The palate is compacted into exceptionally fractured and complex
layers like the diabas slate in which the old, ungrafted vines grow.
Austere, racy, and challenging, without an ounce of fat. Nearly
blinding with its razor-sharp precision.

Pairing:

To reveal this GG’s softer side, try pairing with perch baked in a
butter and dill sauce or herb roasted monkfish on black lentil
salad. Vegetarian options abound, from cauliflower steak with
butter and capers to spaghetti Cacio e Pepe — extra pepper,
please.
