Tasting Notes:

Raise the curtain for the premiere of this great new GG from our cellar. “Auf der Rausch” is an old parcel (1.96 hectares) in the VDP.GROSSEN LAGE Saarburger Rausch and is particularly characterized by its high proportion of diabase. Slightly smoky on the nose, invitingly rocky and you will find fine, wet slate as well as dried herbs such as chamomile and hay. Very silky acidity on the palate, puristic, almost weightless and pleasant, very large drinking flow and length. This debut is a real long-distance runner, because of the long storage in large wooden barrels (18 months) means that it matures more slowly, as its need for oxidation has already been satisfied.

Bouillabaisse, white halibut in shellfish jus on spring leek with braised cherry tomatoes.
